The Food

Breakfasts, lunches and dinners are included in Vietnam and are always diverse enough to please a crowd. Breakfast often could be something Western-style such as bacon and eggs, or perhaps local-style like a bowl of noodle soup. Lunch can be a short break at a rice kitchen, with grilled meats and vegetables, or in some of the more remote areas we provide a picnic style lunch. Dinners are always a treat and change as we move through the region from Pho type soups to grilled veg, meats and incredible stir fry. Northern Vietnamese cuisine is known for its light and balanced flavors, often featuring freshwater fish, crustaceans, and mollusks such as prawns, squids, shrimps, crabs, clams, and mussels. Some notable dishes include crab-centered dishes like bún riêu (crab noodle soup). Noodles are a preference in the north, and the cuisine is less bold and spicy compared to central and southern Vietnamese foods. The use of meats such as pork, beef, and chicken was relatively limited in the past, with a focus on seafood and fish sauce for flavoring. The cuisine varies between the city and the mountains, with a vast selection of food in the city and a focus on rice, fresh vegetables, herbs, and meat in the mountains.

Culture

Northern Vietnam has a distinct culture characterized by its formal and reserved demeanor, influenced by East European, socialist, and communist traditions. The region is known for being the "cradle" of ethnic Vietnamese civilization and is home to signature dishes such as phở and bún chả, which reflect its complex yet simplistic cuisine. The language, architecture, and fashion in the north are also unique, with differences in dialects, building techniques, and a more subdued fashion sense compared to the south. Additionally, there are differences in social behavior, with northerners being perceived as more aloof and formal compared to the quick-to-smile southerner.
